How would the LS7 cam act in a 4.8? Would it be too much for a DD?

I'm pretty sure it won't work at all. The LS7 (and all other GENIV engines) picks up the cam position sensor off the cam gear at the front of the engine. The GENIII truck engines pick it up off the rear of the cam. The GENIV cams don't have the position reluctors ground into them like the GENIII cams do, so they are not usable in GENIII engines.
