What drawbacks are there to having a street truck with a tubbed rear end?

You will lose you bed room, no more hauling around sheet rock between the wheel wells.

nor ply wood! but if you could always raise the floor of you bed as high as the tubs with more sheet metal

really no need unless going for looks right now. you can easily fit 12" of rubber under there
