How do I find the back spacing on my rims while they're on the truck?

I don't think you're gonna be able to do that. Just take it off and check.

how do i measure the backspacing. Do i just start from the spoke and go to the lip.

Put a straight edge across the back of the wheel and measure to the mounting face.
