I had good luck with EBC Rotors and Green pads

EBC Ultimax Black Anodised Brake Rotors..

I really wish i could get some of the factory rotors and pads that came on my truck. i had 180k miles on them, no problems.

The brake pads would depend on how you use the truck. City cruising and quality chrome wheels would normally use ceramic pads, racing and light hauling usually use semi-metallic (stock) pads and heavy hauling/trailering usually have a full metallic pad. The more metal the more dusting.

Rotors are personal--I personally do not like the inconsistency of Chinese rotors so I buy the Canadian truck rotors off fleabay. The best under normal conditions are the solid rotor, slotted are next and slotted/dimpled or drilled are the weakest. However, there are many who feel a slotted/drilled domestic is superior to solid made anywhere else.

I would recommend upgrading to the 05+ bigger rotors and better calipers in the front and going with 2 piston calipers w/ the thicker rotors for the rear.

None that I'm aware of. You just get the 05+ caliper, braket, and rotor and bolt it up. Bleed. Done.
