what thermostat temp should I use for Whipple

I have a 416 ls with a 2.3 Whipple what temperature thermostat t should i be running on this type of setup 160,180,?

Steve I just grabbed a 160 for my ride. I would go with that.

i run a 160 and see a constant 175 degrees
