I haven't read much past the first page, but I am going to say your cam is to big. Big heavy truck needs low end power. If your stall isn't high enough, and your gears don't let you get the revs up so you make enough hp and torque then you aren't going to see gains. (The problem you have)
The other option is that the tune is just your problem and with it fixed you could drop a good deal of et.
Those are my two guesses of your issue.

Tuning is my guess. You've bought the right parts, but aren't getting everything out of them. Not that Weatley can't do it, but tuning a setup like that is very difficult without having a dyno, wideband, and ability to log during the runs. A setup like yours should be done on a dyno with a wideband and on a speed density system. I tune on pretty much a daily basis and even a common setup I will have anywhere from 10 to 35 pulls to get everything where it needs to be. Pretty much you've outgrown mail order tuning.

4.10 gears. i was dead hooking some 1.68 to 1.72 60' times between the last 2 trips, so it is definately time for me to loosen things up on the converter...because i have some more traction aides on order right now. my new 20 gallon fuel cell will sit behind the axle where the spare tire used to be. that should center the weight and make it transfer better. if im dead hooking with my setup right now it means im not trying hard enough lol. my pinion angle will finally get fixed and my shocks relocated both out the back at about a 35 to 40* angle.

that WAS the plan. i had my motor sold and a 6.2 lined up. my buyer backed out and I got cold feet. the spending has to stop somewhere. theres more left in the old *** LS1. it passed leak down a few weeks ago with flying colors...the money i was going to spend on the 6.2 swap could get me a NICE set of heads. trick flow or AFR nice lol. theres just something somewhere that is being missed. maybe gears, maybe cam...i duno. at this point im not opposed to going to a slightly smaller cam. we will see how the looser converter acts with it first.
when running last weekend, wheatley was logging every run and we tried all kinds of stuff. different timing, A/F, lock up's, AFR, we tweaked about 2mph into it on a cruddy night. the weekend before i was running a tenth better on the 1/8 with a heavy head wind.
