overheating issue

Default overheating issue

I have a really weird overheating issue goin on now. I have a 91 c1500 got a 383 in it. Sittin still the truck won't overheat at all, but when i drive constantly on the highway it starts getting hot, itll peg my gauge over to 250 and if i put it in neutral and coast it will cool back down, very fast too actually almost all the way down to 180 (which i have a 180 thermostat in the truck). Now, i took out the tstat and it never ran hot but now its cold out and i really like having a heater. (I checked the stat in boiling water and it does function) Without the tstat it only warmed up to about 120. My theory is (and i may be wrong) but i think the thermostat is closing going down the because maybe its cooling the water off too much causing it to close. Probably sounds crazy but thats about all that makes sense to me. Driving around town when i have to stop and go it doesn't run hot. Also sitting idle for a long time it will not over heat. I have electric fans and am only running one for the winter. Also another reason i think the tstat is closing is because when i put it in neutral it drops down really fast, and if the truck was actually running hot im sure it wouldnt cool off that fast. So, anybody have any ideas on what i can do to fix this? I need a heater so i gotta have a thermostat or atleast something that restricts my flow enough to let the truck heat up. Just tell me what yall think, thanks.

BB mod the t-stat, maybe? Search the site. Someone posted something about this a long while back. If.... IF.... the t-stat closes, this may be a workaround. Also, could it be possible that it's installed backwards? Just curious....

haha naw its not.. double checked it cause the first time my buddy actually put it in.. and i did it this last time and they werent backwards either time, but ill have to check that out.
