Id say do something with an 8.1 , not too many people doing things to them, because of the limited performance products, but im sure one with a little head work, a cam and some boost would bring a big smile to anyone's face.

A dura/alli is good for setting a cookie cutter apart from the rest but a '69 Suburban in good shape is fairly rare (at least around here.) I would keep it simple. 4 barrel, disc brakes, powerglide. Keep it clean and old skool and you'll have more people appreciate it then some tricked out, tweeked out ute.

I have one for ya ...

1971 3/4 ton Suburban with all forged 383 stroker w 438 hp / 474 lbft , modified 4L60 w/ 2300 stall, 3.73 posi FF14 bolt rear. oh and 4 wheel disc brakes. @ 9.5 to 1 Comp

As of now n/a ... but that can change ... it had a 350/400t that I proudly put 300,000 miles on it which earned it a new motor and a new life hauling *** instead of hauling cars.
