First brisket today

I know right? I have cooked a hundred if not 200 ribs, pork, beef, sausages, everything but never wanted to do a brisket. Sorry Texans, I have just never been too in love with them. I've had some awesome brisket, just never cared.

So instead of me doing it, I made a rub and let it marinate for 4 days (some shit came up, couldn't cook it when I first intended) and today I am making my 16 year old do it while I am at work. LOL I am using Mesquite, which I NEVER do anymore. I haven't used mesquite in years but I think it will compliment the rub pretty well. If it turns out good I'll give up the rub ingredients. Here's what 4 days of a rub looks like. :sigh:

2.3 lb

Start off smoker at 220*, looking for internals of 190*-195* and then wrap in aluminum foil until I get home. Guessing a 3-4 hour event. Making him start at 1PM (meat out of fridge at 12PM)

Good luck, I have a 10lb'er (small for me) I am doing, it gets marinated and injected tonight. But I smoke for about 15 hours when I do it.

It's interesting, lots of spices, complicated...it may not smoke well. It may cake on me. We shall see.:popcorn2:

i've never tried a brisket. they take too long and i'm not patient. how would one cook on my gas grill :jest:

:jest: I have tried so many times to beat the odds and cook long term shit on my gas grill. LOL definitely not very successful at it.

Gas grill?? Thought that was a Sin?

We use charcoal, hickory, or pecan.. its sooo much better!
