I made some grilled quail (and drumsticks). First time making quail and my wife and the kiddos really liked them.

I've been playing with home made jerky lately. Anyone got a good recipe to try? My favorite so far is a lucky jerky brand teriyaki season/cure for 18 hrs with a layer of #16 black pepper once laid on the racks for 5 hrs in a dehydrator set at 165*. The teriyaki marinade does not taste like teriyaki at all. I actually hate teriyaki flavor but someone at work requested it and i stumbled across an awesome recipe that i never would have tried if they didn't make the request.

I use milanesa meat cut into strips. Marinate it in Claude's Fajita Marinade for 24hrs and I flip the bag after 12hrs to make sure it all gets soaked. Then dehydrate for 4-6hrs. The claude's is good and has some heat in it. My daughter will eat her weight in their hickory marinade.

isn't milanesa just thin sliced top round steak? If so, I buy the entire top round and slice it myself with a meat slicer. the consistency is perfect.

I haven't made jerky in a long time, but I used only salt and pepper. You can make it out of any meat, preferably a lean cut. I've made venison and even brisket (when it was WAY cheaper LOL).

At our old house we had this really old electric wall oven. Just set to the lowest setting and let the door crack open. Our current home has a double oven and has a warm setting that works well for that. Maybe I should make some again 😁

Yes it is. I don’t have a meat slicer so I buy the pre cut stuff.
