Had q couple bites of this today. Called it short on the birth party. Had too much to do this weekend and lost power at the house so no AC yikes!

@shakenfake that looked dang tasty 😋! Did you get you power restored?

I did burgers and hot dogs on Monday and my wife bought some fajita tacos today. Real Mexican Tacos are plain and simple: corn tortillas, meat, chopped onion and cilantro and a salsa. No crispy taco shells, flour tortillas or shredded cheese: that's Taco Bell or Tex Mex! Just kidding; no, seriously. 🙄

Oh, I had Dickeys bbq yesterday for lunch. 🤷

I wasn't complaining...

I skipped dinner since I had bbq for lunch

Dickey's BBQ. Hey, my other option was Baskin Robbins! 🤭

Made spareribs. I decided to cut them individually before popping them in the oven. Set the timer for 2 hours and went to my Mom's for Mother's Day. My wife called a little after 1:30 saying they looked good, so she pulled them. So then we went to my MILs (visiting from Mexico) for Mother's Day #2. My BIL had made beef birrea and was chopping the meat. The salsas were dang fiery 🔥 There was plenty of food. Everything was good 😊 then there was cake.

I drove North to a job I got in OK and found a local small Mom and Pop burger place. I got me a bison burger. Was pretty good!

Had ribeye for dinner. Was pretty dang salty. I mean, incredibly salty! 😔 My wife suggested that I ask for a low salt option from now on...😒🤕

Made some barbacoa from last week's special on brisket. Trimmed the fat, added the guajillo and grilled it on my grill as usual. I did run out to the grocery to buy some shank for better beef flavor. Time was 4 hours 51 minutes. Coarsely chopped it and served in tacos. My kids love it in tacos.

I remembered to grab a pic of this cook. I almost forgot hence the clean bone lol. Its annoying i spend 8.5 hrs working on a set of ribs and can only finish 2 bones. The pork butt is still rolling. Just wrapped it at 8 hrs.

The dino beef ribs never disappoint. I even prefer them over brisket to be honest. I basically follow brisket cooking protocol but the wrap is much shorter before temp/probe is met (if I wrap). I also like that I don't have to rest them for several hours before eating. I I unwrap the paper once temp is met and let them cool to 160* and dig in.

pork sammiches tonight! I didnt let the liquid go to waste. I pour it into a measuring cup and put it in the fridge for about an hour. the fat separates to the top and hardens. I remove the hardened layer of fat and pour the remaining juices back into the shredded pork.
