Default Problem with coolant temp gauge vs scanner reading

Okay ever since I bought this truck it has idled rough. It will take the idle down to 400rpms once warmed up and will just die sometimes. So I got my dad's scanner and started looking at the O2's, Iat's, and then I came across the ect with read -40. The funny thing is the gauge works fine. If the gauge gets it's input from the computer then why is the gauge not staying at 160. Also I hollowed out my cat's for the sts kit i'm going to put on and it hasnt thrown any codes, which is strange.
