Question Electric fans-2007 Sierra SLT

Need help..
I had a tuner(ef-live) make some changes to my PCM back in 2014, all was well until I recently performed the DOD/AFM delete, cam swap. The tuner went back in did some tune adjustments. A few days later while sitting in traffic I realized the temp gauge needle sitting at the 210-212 mark which was not normal to me. Then I realized I could not hear the variable electric fans, to which we all know can be heard on high when needed. The fans are operating on a low-medium speed only. I went back to the tuner and he plugged his laptop in and was able to 'command' both fans to high speed, but only with the laptop. I saw this for myself while he scrolled the pointer from on to off. I figure someone has experienced this and hope I get a hit. Any suggestions would be greatly appreciated.

210 in my truck is actually only 190-195 on the scanner, the GM clusters are never accurate. It always sits at the 210 mark no matter what anyway.

It's likely not hot enough to make the fans come on high yet and with HP Tuners anyway you can not set the high/low speeds any lower than factory unless you have a 2 BAR operating system installed.

Default I left something out

Actually the tuner lowered the temp at which would command the fans to come on at 196. He himself is asking a gm tech he knows in Green Cove, FL. because he knows the fans should have been on high according to his laptop that was showing the temps exceeding 196 degrees. I am hoping for a sensor problem and not a bad wire as those can be a pia to chase down.

Did you try turning the AC on full Blast? This usually commands the fans to go to High.

Default Off topic, sort of.

I replaced the brake power booster yesterday, third booster from NAPA by Cardone in a year. I didn't get the engine up to operating temperature so will have to try again later.
