Check distributor shaft bearings
I had similar problem for several years. Everyone suggesting I do things to cooling system and catalytic converter. Dumped a lot of money chasing the problem. As last ditch effort took truck to a private mechanic who quickly found the the distributor shaft bearings were shot (bronze journal bearings). He replaced and I've never had a problem since. Apparently the timing was firing randomly +/-10°.

The other day I bought a 04 Avalanche ,seller said it needed head gaskets or an engine as per his mechanic.I seen a full clean coolant bottle and clean oil and it ran great, bought it drove home 25miles was running 260*.Came home put a new OE temp $12 thermostat in it and its perfect, old one was stuck.
