Wiring harness for swap question

Not really sure where to post this but saw this was general wiring so figured I would give it a shot; I am going to be starting a new project shortly - currently just doing some research. Going to be a 2002 Silverado 2500, 94 12v Cummins, 47rh, np241c, D60 front axle, 14bff rear, 3 link w/ coil springs. Transmission Lockup and Overdrive will be controlled by pressure switches.
I am kind of thinking of about gutting and redoing the entire electrical system, try to clean it up under the hood and inside. The wiring is kind of hacked together right now, so anything is an improvement at this point. The Cummins and 47rh have no electronics, so I can eliminate all the PCM and engine wiring. From what I can gather only wiring I can think of is the interior lights, exterior lights, airbag, HVAC (No A/C), starter, alternator, fuel solenoid, power door locks/windows, wipers, radio. Gauge cluster will be autometer gauges.
I was curious if anyone has gone this route before in terms of wiring, basically starting over from scratch.
