I think most street normally aspirated engines come in around 80% or so. A full race engine can be 100%, while top fuel engines can be over 100%...not sure how but just what I've read.

VE (volumetric efficiency) is the amount of air used as a percentage of displacement. With a known cfm of air used say 500cfm, displacement say 325ci, and rpm say 6000, the computed VE is 89%. As you see, it will vary with rpm and load, also a 4.8 can have the same VE ratio as an 8.1, just less cfm pushed. Naturally aspirated, the max is 100% although with a tuned intake and exhaust it is possible to get 103% at a specific rpm. Forced induction can have 140% and much more. A VE table is a chart with rpm on one axis and vacuum/boost (or load) on the other axis and is used to compute the amount of fuel for the injectors.
Maybe someone else knows the exact max for a stock 5.3, if that's what you're after.
