Stock throttlebody will be fine, for what you want to do that is all that is needed. To the other person, yes a 4.8, 5.3 and 6.0 have the same TB.

K. Got the throttle body. Just wondering if having the heads milled would be worth the trouble and to what specs...

Honestly no more than a buggy weighs I would just throw the 6.0 in there with headers and good tune and call it good. No sense in going through the motor if you dont have to. Also, check out pirate4x4 for more info, there are tons of guys over there that have done exactly what you are doing. Good luck.

The easiest way to bump compression in your situation would be to mill the heads. You would really want to with an aftermarket cam of any kind. With a stock cam not as important.

Someone already said it but keep the LSA low. The bigger LSA the more geared towards top-end the cam is, the lower it is the better geared for low-end power. Valve list isn't as big a concern, kinda curious why it was brought up actually.
