You can give circle d a call and they will hook you up with your converter options. They are great and helpful. The summit kit is fine, but not ideal. IMO.

Cool, circle d makes a direct fit converter..

West coast cylinder heads can do heads for 850$

Ls2 timing will fit the stock cover correct?

Any other things I should be looking at?

Any recommendations for a tuner and standalone wiring harness that's not 800$ haha

Are you wanting an aftermarket PCM or stock? Are you wanting to tune on your own or using a pro?

I was thinking a pro tune on the stock PCM.. I don't think I'm doing enough to warrant a custom PCM..

I've been in contact with blackbear.. Just curious opinions for tunes..

And wiring harnesses

Found out I can get a TCI flex plate that'll allow the use of a standard th350 converter too

Alright so here's what I'm thinking

Cam: xr275hr
http://m.summitracing.com/parts/cca-54-426-11
Springs: comp
http://m.summitracing.com/parts/cca-26918-16
Converter:
Circle d direct fit 3000 stall
Ls6 oil pump
Ls2 timing chain
Ls7 lifters and trays
Chromoly push rods
Comp trunnion bearings:

West coast cylinder heads rework with:1.950"/1.57" valve sizes.

This look like a good list?
Obviously will add good headers ( open exhaust)
And a custom aluminum intake pipe( to get the filter past the radiator)

If you're not local there are better tuners than blackbear. He started to get swamped and there have been some issues with customer service, not so great tunes, etc.
There are lots of tuners out there, try and find someone local first. With the jeep, it will make your life a lot easier.

Why spend $$$ for 243s when 241s can be had much cheaper? Or you could have a local shop put the 2" intake in the 862s for reasonable money. The 862s have smaller chambers, so the same amount of milling gives higher CR.

Is your intake manifold a nbs with 78mm tb or nnbs with a 87mm tb?

Since you plan on revving it to 7-7500 might want to think about a different intake manifold. I believe the stock truck intake manifold falls off around 6000rpms and with 4.10s and 3K stall you should be skipping the lowend power 0-2500rpm range anyways where the truck intake shines over other manifolds. This is mainly for the nbs manifold.

Also would the nbs truck intake manifold restrict the full potential of ported heads? especially with revving the motor that high?

I agree with this. If you have someone local then try them first as long as they are reputable. Also chucks tuning is an awesome option. Quite possibly the best in the business. Live tune is always best IMO.

243s are only a tiny bit more money now that they were stock on every 4.8/5.3 NNBS trucks. $300 for stockers. 243s are a far far superior flowing head vs 241s. It's about $1000 for completely worked 243s. I would bet 862s will run around $800 for a proper set.

The Nbs intake will become a restriction around 6000rpm as mentioned. The TBSS/NNBS 87/90mm intake would open it up quite a bit, but conversion will cost much more than it is likely worth. Best case scenario it will open up 15-20rwhp at a cost of well over $500. If this were FI or nitrous or a bigger motor it would be worth it. However, the NA small cube build doesn't warrant it on a budget.

gamble would an ls6 intake be more beneficial in the 7-7500 vs the nnbs just out of curiosity?

OP gamble made a good point on the conversion cost, you could p&p you tb for an extra 2-3 poneys lol
