Going from 20's to 18's, need tire help

Here's the deal, I am getting rid of my GM factory 20's for some Boze 18" X 9" wheels. I am stuck on the tire size to get. The stock tires are 275/55R20 (which I am sure you all know that). I am thinking of either 285/55 or 285/60's. The 55's will give about 1.5" shorter diameter, while the 60's will be about .5" shorter. I know the 55's will give me an overall better ratio for off the line performance, but the stiffer sidewall won't hook up or ride as nice as the 60's. I also think the 55's will bring down my fuel mileage a bit vs the 60's.
This is a 2WD VHO. Will the 55's better overall gearing & less mass have that much gain over a 60? Or will that 60's hook better and cancel out the gearing advantage of the 55's?
Please help...
