I thought the stainless works LT's had the 3" collector, no?

No, the kit came with 2-1/2" collector and y-pipe and is still available like this today. You can however purchase headers without y-pipe with 3" collectors.

You may want to think about how much it will cost for new collectors, the cost of putting them on, and how much you could sell the current headers as is. You may be better off just upgrading... never know.

Im in no rush to do anything with the headers right now as I have the boost modifications on the list first. We'll see where they get me first.

Those are pretty stout numbers given only 7 psi. I wouldn't change a thing, just crank the boost up and see what you can get out of it.

Hopefully you don't start to see any belt slip with the smaller pulley

I have a modified snout support with added idler to help with belt wrap/slip. If this does not work I have a few other ideas to assist. It can be seen here:

Yea I remember seeing that thread. With that much wrap you will most likely be fine, but you could always go to a slightly larger idler since the snout pulley will be smaller.
