yes it is.
Aaron is the man when it comes to BBQ. He made all of his own smokers as well.
Count me in. It’s worth $10.
in competition, a lot of teams will focus on getting an amazing few slices instead of a very good entire packer. I doubt the meat goes to waste, and someone surely eats it. In the competition world, it's all about winning some money and 95% of a full packer is just a byproduct of trying to impress the judges with the amazing 5% portion of the brisket. Aaron is a restaurant owner and cooks the entire piece of meat to be enjoyed like 98% of us would do.
Count me in. It’s worth $10.

I have a 22" WSM also. Ive thought about an offset but im already at the point with the wsm where is set and forget it. Might have to make a few adjustments here and there, but nothing where I have to baby the fire.

to me, the PitBarrels, UDS and WSM cookers all basically work exactly the same. pick your poison. i may be over romanticizing cooking with logs. I know it's more work, but it seems like it would give more of an authentic taste over charcoal with wood chunks. maybe i just haven't found the right charcoal yet. the WSM sure is nice once you find the sweet spot. the electric smoker is even more of a set it and forget it setup. I threw away the chip burner and got the a-maze-n pellet tray for the electric smoker. it was the best mod ever for that thing. no more adding chips and having inconsistent smoke.
