To drain the coolant there is a BIG set screw on both sides of the block. If you remove them the water jacket is drained. That's what I use for a head swap, but you could use it for a cam swap too. These set screws are quite large. The largest allen wrench I have is 3/4" and it gets the set screws out, but it actually needs to be a little bit bigger.

I was lucky enough to have a petcock on my factory rad when I did my cam swap...can't remember if I have one on my 34" rad...I'll find out when I swap in my LQ9. As for removing the water pump, I used a big drain pain with one of the transmission style splash shields (the big grey square one with the holes in the middle), and I didn't spill a drop. Didn't want to be laying in anti-freeze later when I put the lower cover to oil-pan bolts in I hate messes...
I used to be on the EPA's most wanted list years ago as I was growing up and learning, then I learned tricks and figured out that playing in spilled oil and anti-freeze sucks. Don't worry, you'll learn to spill less as you become a better mechanic Scott
