You want trans temps well under 150 which will be constantly battling against the higher coolant temps.
In traffic in Arizona heat with a loose converter I'm not sure how many trans coolers I'd need to keep it under 150 but 1 true cool was not close enough. No my current setup won't keep under 150 either but I haven't seen it over 200 the way it is now which I did before.

I run my tru cool 40000 inbetween my ac condenser and my radiator. My 4.5 inch intercooler took up all my room upfront. Truck makes right at 800 at the wheels through a 4l80e , and my trans temps never go above 160 . My trucks a crew cab 4x4 too with a 3200 triple disc. Trans lines to radiator cooler first then to the tru cool then back to tranny. In the winter in missouri my trans has a hard time getting to 130 degrees . Hope this helps

Sounds like a problem with your setup.

Even hotlapping and running the **** out of my truck at the track, brake boosting I would never see 200. Not even 180.

Tell me were I say my temp still gets up to 200. When all I had was the truecool mounted in a place with poor air and tried to rely on 2 unshrouded electric fans for enough air flow, yes there was a problem with my setup and it did not work for me at all. Back then it was easy to see 200+ temps. While my current setup is obviously not up to your standards for a performance application, I have no problem with it and am actually happy with it's performance.
