Vortech 5.7 to carbureted 383
Any concerns I should be aware of with the PCM, etc. in yanking out my EFI 5.7 and replacing it with a 838 carb and 4l80? Truck is a '97 RCSB.

I ran my 383 in my 97 Tahoe on the oem spider injection unit and pcm. I did have it tuned eventually with HP Tuners in Speed Density mode. I would go that same route if I was to do another one.

I built my 383 for torque and towing, the intake wasn't really an issue. Blueprint engines has a 383ht that was very similar to what I built, it dynoed the same numbers with carb and fuel injection within a couple horsepower. It was easier for me to keep the factory systems in place and reprogram the ecu. I personally had no issues except I had to bump my idle speed up slightly to avoid idle surge.
If you are going to a larger cam than me, then you may have a totally different story. I eventually did break the Eagle crankshaft as the 383 isn't the greatest for running in high rpm ranges, I would make sure your build is dynamically balanced. I rebuilt that motor with a different crankshaft (can't remember the brand) the second time and sold it a couple months later as fuel prices skyrocketed locally.
