I did trim some to clean it up. To be honest the meat cooked up nice and with the marinade I do not think the fat was going to make a difference. I did use a Bloody Mary mix as well however I did question the recipe with the celery seed. Pretty sure I used crushed and just grilled the meat for a few minutes a side. When we used this recipe I used it to make taco's and I was told I could make it again. So I guess it worked!

I marinated a flank in spicy V8 for two days then stuck it and marinade in the freezer last week. Stuck a little vinegar in with it to add some acid. LOL Never had the time to cook it and forgot all about it. Gonna fire up the coals on that bitch today.

i personally was not a fan of it. i felt like the meat soaked up more of the vodka flavor than the tomato flavor. so i guess im just used to eating regular carne asada this was just not what i am used to, just in case i didnt like it i had another 2 strips of skirt steak marinating in a traditional seasoning.
