An easy wrap
Try it on the pit next time you are looking for an idea....
Take some boneless chicken breast *i trim any fat i can off*. Put it in a bowl with whatever you want to season it with. I like to put some rub seasoning an some jalapeno juice to let it soak in.
Take some boudin (crawfish is good) or smoke sausage, diced jalapenos, cream cheese *if you want, i dont care to put any* and roll the chicken breast up around those ingredents. Then you wrap the whole breast with 2 strips of bacon and use tooth picks or metal rods to hold it all together.
Rule of thumb is depending your pit, when the bacon is darkened the chicken is done. I do one side at a time letting most of my other stuff cook. Then you throw some bbq on top or you use it at a "dipping sauce"
