here's the last batch of 100lbs. . . .
they were field mix . . . $1.90lb
made 3 batches
100lbs of bugs
30pc of corn
20lbs of taders
4qts of mushrooms
15 lemons
4 bags of peppers
1 bucket of Zatarain's mix
2 10oz cans cayenne pepper
10 links of susage

I never take pics when we boil. last one we did was about 165lbs and plenty hot lol. I have started using Pro Boil and have never looked back, right amount of heat and flavor... I alway add plenty of liquid boil and my own seasoning too. Mushrooms are MY FAVORITE.... They always float around up top and get steamed and soak up some serious flavor!

Crawfish season is right around the corner
If you have good rolling water, put drop your bugs in, drop the lid on and pull them out 6min later.
I always drain them coming out of the pot, dump them in a (old) cooler and shake more seasoning over them along with a stick or two of butter. Drop the lid. DO NOT LATCH THE LID ON THE COOLER!!!! And let them sit for a few more minutes... Get a buddy to help you shake the cooler up and enjoy!!!!
My pots are washed up and hanging in the shop, I'll probably get a new double burner this yr along with another pot... single can't keep up when you do 200+lb like we do on a regular basis.
There's a guy local that builds custom crawfish pots. I'll probably get him to make me one.

I put the crawfish boil in with the limes and lemons, garlic, onions, cayenne pepper, frozen corn on the cob, and the liquid boil mix.
Dump it all in at once, and light it off. Keep the lid on, and don't touch it until it starts to steam, then the bugs, and mushrooms go in, and again . . . wait for the steam. Roll, stir, flip the bottom over a few times, . . . . and kill it after 10 minutes.
After it cooks for the 10 minutes, the bugs and shrooms are floating, keep rolling it over for a little bit . . . at least a beer.
Kill the flame, and then it's soak time. I like to cool off the pot with frozen 3 liter coke bottles, and then hitting the pot with the hose. Once the bugs sink, they're ready to come out. Pull the basket out and hang it sideways and let them drain for 5-7 minutes . . . stright to the table, or to the ice chest.
I don't sprinkle anything on them in the end, I think it's "cheating" and I keep the mix in the pot instead.
