This is the exact method i use. 3-2-1 at 225. I usually cut the last hour short because i like the meat extremely soft. Dont dare grab a rib because it will fall out. Im new to it and am still experimenting with wood chips in my cheap masterbuilt.

I just did a bacon wrapped stuffed pork loin today was to die for...lol
took at 12" piece of pork loin and spiral cut it...laid it flat...spread cream cheese and sliced fresh jalepinos with garlic and black pepper as I rolled it back to normal...took some wax paper and laid peppered bacon inline with each other to cover loin from end to end...set the loin on top of the bacon and rolled it over...pinned it together with tooth picks...set on top rack of smoker at 230 for 3 and 1/2 hours....smoked with hickory...DAUM!!!!
did this with my last deer back strap the other day as well...mmmmm
