Got 2 racks of st luis spares on now. The smell is driving me crazy and im only into my 2nd hour. Straight hickory this time and bumped the temp to 235 instead of my typical 225. Cyder vinegar in the drip pan.

Havent smoked in a while due to rain on us since november, and a cardiologist telling me my blood is out of wack. I can only be good for so long lol

the worst part about smoking is how long it takes! it smells good for 6+ hrs. i tried something else new too. instead of my normal foil wrap with apple/pineapple juice, i went with butter and honey with a light coat of brown sugar. we'll see.

Here's some pics of my smoker and a few things I've thrown together! I've never used foil for ribs or anything, just sauce them the last few hours of smoking. just straight on the rack and a bunch of Apple, mesquite, hickory, pretty much watever I feel like using... And of course some beers and the pool! It's usually an all day affair! Love chicken quarters and pork ribs!
